Sunday Discard Pancakes

The recipe that made us stop feeling guilty about throwing starter away. Tangy, tender, ready in 15 minutes.

Ingredients

Scale batch
  • 200g sourdough discard
  • 1 large egg
  • 180g buttermilk
  • 120g all-purpose flour
  • 20g sugar
  • 5g baking soda
  • 4g fine salt
  • 30g melted butter

Method

    Whisk discard, egg, and buttermilk in a large bowl.

    In a second bowl, sift flour, sugar, baking soda, and salt. Fold into the wet mix until just combined.

    Stir in melted butter. The batter will bubble — that's the point.

  4. 04

    Cook on a buttered griddle at medium-low, 2 minutes per side, until deep golden.

    Serve immediately with warm maple syrup.
