How To Revive The Apron Maven Dehydrated Sourdough Starter

Rehydrating Your Apron Maven Sourdough Starter
What You’ll Need:
- A 16oz clean glass jar
- Filtered tap or bottled spring water (not distilled, reverse osmosis, or purified)
- Unbleached all-purpose or bread flour
- A mixing utensil (no metal is better)
- A larger jar for transferring on Day 5
Pro Tip:
Start the rehydration process in the morning if possible, so you can schedule baking when your starter reaches peak activity (4-6 hours after feeding). Once fully revived, your starter will double in size and show bubbles.
Day 1: Rehydrating Begins
1. Empty one full packet of dehydrated starter into a clean glass jar.
2. Add 3 tablespoons of room temperature water and let it sit for 1 hour.
3. After 1 hour, add 2 tablespoons of flour. Stir well until no clumps remain.
4. Cover loosely and let sit at room temperature for 24 hours.
Day 2: First Feeding
1. Remove the lid and add:
- 2 tablespoons of flour
- 1 to 1.5 tablespoons of water (adjust to a thick pancake batter consistency)
2. Stir well, cover loosely, and let sit for another 24 hours.
Day 3: Activity Begins!
1. Repeat the steps from Day 2.
2. You might start noticing bubbles—a sign that your starter is waking up!
3. Cover loosely and let sit for another 24 hours.
Day 4: Bigger Feeding
1. If your starter has risen and fallen, leaving streaks on the jar, it’s time for a bigger feed.
2. Feed your starter:
- ½ cup of flour
- ¼ cup of room temperature water.
- If the mixture is too thick, add 1 teaspoon of water at a time until you achieve a thick pancake batter consistency.
3. Cover loosely and let sit for another 24 hours.
Day 5: It’s Almost Ready!
1. Move your starter to a larger jar (32oz-64oz) if you haven’t already.
2. Feed your starter:
- ½ cup of flour
- ¼ cup of room temperature water
- Adjust with small amounts of water if needed to maintain a thick pancake batter consistency.
3. Your starter should start doubling in size within 4-6 hours after feeding.
4. Once it consistently doubles, your starter is fully revived and ready for regular maintenance.
Starter Maintenance (Day 6+)
Option 1: Storing at Room Temperature (Daily Feeding)*
- Feed your starter daily to keep it active.
- If more than ¼ of the jar is full, remove some before feeding.
- Feed your starter with a 1:1:1 ratio (equal parts starter, flour, and water) based on the amount of starter left in the jar.
- Stir well and maintain a thick pancake batter consistency.
Option 2: Storing in the Fridge (Feeding Every 7-10 Days)
- If you don’t bake often, keep your starter in the fridge and feed it every 7-10 days.
- Before refrigerating, feed it fresh and let it sit for 2 hours before placing it in the fridge.
- To revive, take it out 1-2 days before baking, feed it daily, and wait for it to double in size before using.
